African lions have not been hunted for decades- they are a protected species, and it is illegal to set out to kill one. It is only legal in self-defence, if the animal is about to attack you and you have no option but to shoot it.
In the days when they WERE hunted, it was simply for prestige- they couldn't be eaten for food, it was simply because some people got a feeling of power and triumph at overpowering a fierce beast by killing it and having it's head mounted on a plaque. They also used to make lionskin rugs out of their skins for the same reason.
