There are not five parts to the Mass, there are only two parts. The first part is the Liturgy of the Word, used to be known as the Mass of the Catechumens, and the Second Part is the Liturgy of the Eucharist, used to be known as the Mass of the Faithful.
You may be thinking of the five invariable parts which may be sung, in Latin they are known as:
Kyrie eleison ("Lord, have mercy")
Gloria ("Glory to God in the highest")
Credo ("I believe in one God"), the Nicene Creed
Sanctus ("Holy, Holy, Holy"), the second part of which, beginning with the word "Benedictus" ("Blessed is he"), was often sung separately after the consecration, if the setting was long. (See Benedictus for other chants beginning with that word.)
Agnus Dei ("Lamb of God")

In 1545, the Council of Trent established one uniform way to say the Mass: the Tridentine Mass, or more commonly known as the Latin Mass. The Latin Mass was the standard way of celebrating the Mass from the Council of Trent until the Second Vatican Council (Vatican II), which was held from 1962-1965. Therefore, the English Mass is fairly new. Since Masses were held in Latin, more people knew and understood the language, or at least the Mass parts. Everyone who was born in the year 1960 or before probably remembers when Mass was celebrated in Latin and also remembers some of the responses, as well as what they mean. Now that Mass is commonly celebrated in English in the United States, less people know the Latin form of the Mass. Some don't even know that there is a Latin Mass. However, it is possible to learn.
