The advantage is storage ! When I dry 3 bell peppers, they will reduce down to about 1/2 cup. A gallon of fresh parsley reduces to a small zip-loc bag !

Dried fruits are great in trail mix, and light to carry when you are hiking.

The biggest advantage for drying food is that you can store it on the shelf at room temperature and if there's no moisture, it will last a very, very long time, maybe for years. Dried foods are good for taking camping or hiking. They will keep safely if there's no electricity available. It is so simple to simply throw dried foods into a soup or stew. They will hydrate as it cooks. There are few disadvantages, but you may consider having to hydrate some foods before using them as a disadvantage.
