This is a very slow process. Pieces of meat may fall apart. The fire cannot be up too high or the liquids would evaporate causing the food to burn. If the stove is too low, and too much liquid is in the stew the gravy may not dry in time. Gravy may bee too long.

Stewing takes a long time, and is best used on fairly fatty cuts of meat, otherwise they tend to dry out and taste chewy.

On the plus side, stewing involves cooking in a lot of liquid, so you can pretty much leave the stew on a low heat or in a low oven, forget about it and come back in a few hours when it's cooked. The amount of hands-on time to prepare the stew is fairly minimal.

Stew is a one-pot dish, so you get minimal washing up. However this is a disadvantage if everybody in the family prefers slightly different ingredients in their meal, since you cannot easily prepare stews separately to everybody's liking.

only disadvantage I can see is the length of time it takes compared to say frying a steak. many advantages - it is a complete meal by itself, all the goodness of the vegetable and meat juices are kept in the stew so none of the juice or vitamins are thrown out as with boiling vegetables.Also very yummy.
