Baking soda (Sodium bicarbonate) is a primary component of baking powder. Baking soda will form carbon dioxide bubbles when it reacts with an acid. If the batter is not sour, that is to say, it does not contain acid in the form of lemon juice, tartaric acid, sour cream or the like, the recipe will call for baking powder which has its own acid in the form of cream of tartar. The advantage of using baking soda is that it is less expensive, and it will sweeten a sour batter. The advantage is lost if the batter is not sour to begin with. If you substitute baking soda for baking powder the batter may not rise. If you substitute baking powder for baking soda, the results may taste unpleasantly tart.
