Porting is something done to the intake, and exhaust ports in the cylinder head. It enlarges the ports allowing more air/fuel mixture to flow into the combustion chamber, making more power. An engine is like an air pump. The more you flow through it, the more power you get out of it. Polishing is where they polish the enlarged ports, to a smooth finish.
