Your best bet is to rent a passenger van (make sure it has luggage space in the back -- not all of them do -- or have the agency remove one of the bench seats). The alternative is to rent multiple vehicles.

Most rental car companies rent minivans and large SUVs such as the Suburban. The best bet is to call the individual branches of a company and specify that the car must seat 8 (not 7), and ask if such a car is available there.
