There are not very many cars capable of seating 8 people (with seat belts). They include the Chevy Suburban/GMC Yukon and may include minivans IF the minivan has a bench center row (the majority of minivans will be a 3/2/2 seat arrangement with the middle row being 2 separate seats that are not connected).

Also, you can consider a passenger van (usually a Ford or Chevy), as these come in sizes to seat anywhere from 10 to 15 people.

Also be aware that even if you find a Suburban or a minivan that seats 8, there will be very little room left for luggage. There is an XL trim line for the Suburban/Yukon that has extra space in the back for luggage, but you should specifically request a car like this.

Most rental car companies rent minivans and large SUVs such as the Suburban. The best bet is to call the individual branches of a company and specify that the car must seat 8 (not 7), and ask if such a car is available there.
