The Angles and the Saxons were two groups of people who settled in Britain centuries ago. Their people groups merged and came to be called the "Anglo-Saxons." The Angles spoke a language that was called "Angleish" and this is what became "English." Therefore, the literature written by the Anglo-Saxon people would have been called "Anglo Saxon Literature."
