Sometimes cooking can cook out all or most of the nutrients in food. You see, the optimal cooking for things like veggies is just a wee bit, or al dente. When they are cooked so long that they get mushy most of the nutrients are cooked right out of them. Cooking food can also result in harmful things from oil that is heated too high.

Well, some say it's unhealthy but I eat it and have never been a pound overweight in my life.

'Traditional' is such a broad definition it isn't possible to say. Traditional Japanese food is quite healthy while traditional German food is high in fat and salt. Traditional Mediterranean food is considered healthy while traditional foods eaten by indigenous Alaskans are not.

If you mean by preparing the food ahead of time, then most of the flavor is lost in the fact that it has to be frozen and reheated.

they usually takes much longer to prepare rather than using fast foods eg preparing mahewu takes up to 2-3 days
