How do you cook papadums?

Traditionally, you cook them over an open flame with tongs. However, this is REALLY HARD to pull off without burning or undercooking the papadum. Peanut brittle problem. My peanut brittle seems to recrystallise into sugar instead of hard toffee. I am using a sugar thermometer to the hard crack stage. Am I overcooking or undercooking?
