When fats are digested they are broken down into various substances to be transported around the body. Cholesterol is one of these substances. Additionally things called 'free radicals' are also produced during their digestion.
It is these free radicals that can cause damage to the insides of the blood vessels eventually leading to the furring up of the blood vessels (atherosclerosis). Sometimes the furring can get so bad it completely blocks the blood vessel or the vessel gets so small inside due to the furring that a small blood clot that might normally pass easily causes the blockage on the blood vessel.
Depending where the blood vessel was transporting blood to, affects the possible outcome. For example if it was a main vessel supplying the brain a person may have a stroke, or if it supplies the heart it may lead to a heart attack.
A quick word to say that fruit and vegetables have a protective effect and that is in some part due to the fact they can 'soak' up free radicals thus reducing the damage they cause.
