According to Wikipedia the thyroid gland, the pituitary gland, and the pancreas are part of the endocrine system. The main function of these, and other glands within the endocrine system, is to secrete hormones into the blood.
The structural modification in the salivary glands that allow them to carry out their functions are the different sized glands and their location. The larger of the two glands is the parotid gland. The smaller of the two salivary glands is the submandibular gland.

Sebaceous glands secrete oil to protect the skin. Sweat glands secrete watery perspiration to excrete wastes and cool the body.
Oxytocin is a hormone that functions to activate the mammary glands to release milk. Prolactin is a hormone that functions to start milk production in the mammary glands. High levels of these hormones would lead to the mammary glands secreting milk.
