They have special teeth, to eat bamboo, um and they have a bigger wrist bone so it is easier to hold the bamboo.
They have sharp teeth for biting bamboo and an extended bone in their paw that works as an opposable thumb. It would be hard to hold round stuff like bamboo without one.

The esophagus and stomach has developed a strong lining so it will not tear, the intestines are shorter due to the high cellulose content of bamboo, and the colon is larger since it is putting much more into its body while producing waste less frequently.
