Caramel is a wide range of confections that are beige to dark brown in color and derived from the caramelization of sugar. Caramel is often made when cooking sweets. Caramel is made by heating sugar slowly to around 170 °C (338 °F). As the sugar melts and approaches this temperature, the molecules break down and re-form into compounds with a characteristic caramel color and flavor. Caramelization is the removal of water from a sugar, proceeding to isomerization and polymerization of the sugars into various high-weight compounds.

Basically, all you have to do is:

1) Turn on the cooker and let the pan heat up

2) Put sugar into the pan. As much as you like.

3) Wait and stir until you see the sugar turn browny

THAT'S IT!!

OR

measure out half a mug of sugar and 6 level table spoons of butter, put them into a pan and let it all melt, after about two minutes when it is liquidy, pour into a dish and wait.... happy caramel
