I suspect your question is more involved though. If you are testing whether a change in temperature matters, you need a hot plate and an ice water bath to make the water warm or cold. If you are testing whether agitation matters, you need something to stir with. If you are testing whether particle size or surface area matters, you need a mortar and pestle. For all of these tests, you will also want a graduated cylinder to make sure you are using the same volume of water each time and a timer to measure how many seconds it takes for the sugar or salt to dissolve.
