The artificial sweetener used is Aspartame. It is about 300 times sweetner than natural sugar and is actually a dipeptide composed of aspartic acid and phenylalanine. I believe one of the first popular artificial sweeteners used in diet sodas within the USA was saccharin.

There are many different commonly used sweeteners for diabetic cookie recipes. Some of the most popular ones are Splenda, Sweet One, NutraSweet, and Sugar Twin.
Sodas do not contain any fat to begin with. The difference between regular sodas and diet sodas is the sweeteners used, because the artificial sweeteners used in diet sodas lower the calorie count of the drink. However, many of those artificial sweeteners have adverse effects, and are often thought to be carcinogens (cancer-causing agents)

Honey has been used as a natural sweetener since ancient times and it is still very popular with people who wish to avoid the side effects that come from artificial sweeteners. There is a plant called Stevia which is increasing in popularity because it is both natural and much sweeter than sugar, and so it can be used in tiny amounts to great effect.
