Because the Jewish people believe the day starts in the sunset (and not in midnight). This is because of the description of the creation of the world in the Old Testament : "And the evening and the morning were the first day." (Genesis 1,5) (The same in all the days of the creation) The description of a day here is first evening, and then morning.
Judaism teaches no such thing. The teaching is that Creation happened over six days (which to us would be Sunday to Friday), then God rested on the seventh day, our Saturday. Days in Jewish tradition begin at sunset: "And the evening and the morning were the first day", etc.
