We don't celebrate Christmas. Christmas is a Christian holiday. When you say "did," what time period do you mean? The Jews have never celebrated Christmas, since they don't believe in Christ. However, post World War 2, many Jews in the US and Canada felt that they had to strongly assimilate into the North American culture in order to remain safe living in those countries. As a result, some of these Jews, who were mainly secular, chose to participate in the physical participation of Christmas (tree, decorations, gifts) as it is such a predominant celebration. Although they participated in the celebration aspects, they did not participate in the religious part of the holiday. This was and is considered a very controversial practice amongst the greater Jewish community as participating in any aspect of another religion's celebrations is a direct violation of Judaism.
