The two most common types of antifreeze are proteins and ethylene glycol. The proteins simply undo the formation of ice crystals by breaking them down as they try to form. Ethylene glycol, on the other hand, reduces the temperature at which liquids can freeze, thus preventing the ice from ever trying to crystallize.
