If you are having this problem at the gas pump, it is likely the curve in the gas pipe to the tank is allowing to much gas to linger by the nozzle of the pump, the easiest fix to this problem would be...next time u pump gas pull the pump nozzle out of the pipe a few inches, this should allow steady gas flow, and prevent this problem...as for the "coke bottle noise" this is simply pressure in your gas tank which is entirely normal, nothing to worry about just open lid slowly.

I think you will find an access panel inside the car just above the pump that will allow you to replace it without removing the tank.
Your air vent on the gas tank neck could be plug..
The fuel pump on a 2003 Envoy is changed by removing the gas tank support straps, lowering the fuel tank, and disconnecting the fuel lines. The wiring harness is then disconnected, the pump unbolted, and the removed to allow the new pump to be installed.
