For electricity production, I would classify conventional as coal, oil, natural gas, hydro. These have been in use for a century or more, and are still in use, which I think would fit with 'conventional'. Some might extend this to include nuclear, which has been in use for 50 years, but was certainly regarded as unconventional when it started.
I think that now it is more useful to define sources as renewable or non-renewable, which works out a little differently.
