Simple - Look at the formulas involved. FeO and Fe2O3 by reducing them in a blast furnace you remove the oxygen so that the become Fe only.

The first FeO is black and is Iron Oxide, the other has two atoms of iron combined with three atoms of Oxygen. Fe2O3 is orange due to the formation of rust, and a common form is Haematite.
