Medieval castles evolved because the old Motte and Bailey castles where easier to set alight and where not very strong, so they made stone castles to improve defence.
Castles were not always stone, but were always fortified for protection. Early on in the Middle Ages, they were made of wood and earthworks; they could be built quickly and inexpensively, but they did not last very long and were easier to defeat than later castles. The later castles were usually made of stone, and were stronger. Where stone was not available, brick was often used, and where a castle was needed in a hurry, the old wood work could still be used. The earliest castles were Norman Motte and Bailey castles during the Medieval period of 1066 to 1153. Motte and Bailey were built on top on hilltops and a high and extremely steep mound was built which had very steep sides and a Tower was built on top of it. The process of excavating the earth to build the massive mound, which was the motte, created a highly convenient defensive ditch at the base of the motte and surrounding the whole of the bailey. The ditch became known as the Moat. These castles were made of wood. From 1154-1485 the castles builders were the Plantagenet English Kings. These great old castles were built for Medieval warfare and defence and new parts of the castle were designed for this. These were made of stone instead of wood because wood caught fire in battle.

Stone keep castles were first built in Medieval England by William the Conqueror. Stone allowed the castles to be build higher than previous wooden castles. This gave them the great advantage of visibility, allowing defenders to see enemies coming from a great distance.

some castles are old and rotty like the motte and baileys it is made of wood so the wood would have rotten. the stone castles would be in bits now castles now are old and some are still left for visiting.
Because the buildings are very old. Sometimes, they are grown on purpose as they are very aesthetically pleasing. Usually, the ivy are not destroyed unless they are a threat to health or to the building
