I have never used or seen a recipe for using eggs in an apple pie. I don't know where you would use any. My apple pie is a double crust, no eggs in it. Apples, sugar with some cornstarch for thickening, Cinnamon, a little clove and nutmeg. A few pieces of butter on top of the apples if you want and bake.

While I don't know about the pie portion, in the crust you can use apple sauce. Most cookies and stuff apple sauce can be exchanged for eggs
