There are lots of things to do with beetroot. Roast whole still in skins, wrap in foil and bake for 35-45mins about 220-250 degrees or until soft. Wear gloves and then peel, avoiding skin discolouration. Cut in a small dice, add to salads for flavour and colour, or puree doen and add to tipo 00 flour and eggs to make 'Pasta Cardinale', a beautiful pink/purple pasta, or try making Borscht, a Russian classic soup!!
