Spreadsheets can be used for financial analysis, which is something all businesses need to do. We would particularly associate them with people like Accountants, but they are not limited just to them. Anyone trying to do things like record sales or costs can use a spreadsheet. A large amount of running a business involves dealing with calculations. Companies can use accountancy packages and payroll packages, but they can also do a huge amount with spreadsheets. They can use spreadsheets to generate charts which is useful for businesses. There is so many things that a spreadsheet can be used for in a business, that it would be impossible to list them all.
I find Microsoft Excel to be limited to my imagination. It can be used for simply typing in data needed to be displayed in rows and columns to complete multisheet applications. I have learned to use the functions feature very well and have created a multi worksheet application that calculates fabric yardage for any application i.e. drapery, just by entering the dimensions, fullness, fabric pattern name & color, customer information, markup and etc.. Excel then, in turn, prints out a fabric order for the correct vendor with shipping instructions to my workroom, a work order for the workroom, a work order for installation, or just simply a quote for the customer. All this begins with a point and click switch board on the first worksheet.
It took a while to create this application, but it now takes ten minutes to do an all day job. It has been worth the time and effort to learn Excel.
There are so many things that can be done, that it is impossible to list them. Broadly, spreadsheets are used for numerical analysis and manipulation. So they are particularly used for processing numbers, but not exclusively. They can be used as simple databases, but for heavy databasing operations it is better to use other applications. Spreadsheets allow you to do a lot of statistical work and creating graphs too. Then can be used for forecasting and analysing figures.

It can be used in a wide variety of ways to support decision making for businesses. By changing values they can evaluate what might happen in different situations, like how much they invest or how many staff the use or what the price of their raw materials are etc. By changing figures and using a "What if?" approach, by say what if we do something. They can use charts to help them. They can examine trends and extrapolate what is likely to happen. They can compare their figures for different time periods. There is a lot they can do to calculate figures and analyse them and then decide what they are going to do. So Excel is very important in decision making for businesses.

The official Microsoft site itself has online tutorials for using Microsoft Excel 2007 in its 'Support' section. There are tutorials for familiarization, creating graphs, reports, and for accumulating data.
If you are using Microsoft Word Excel then you could just use the Auto Sum.

Not sure if you want to know how to export data from Excel or import data into Excel. Either way, the answer depends on what you are trying to do. You can export data from Excel by using the SaveAs option to save the file in a format you choose. If you are trying to use another program to extract data from Excel, you will need to use the options available to that specific program.
Microsoft Excel has the basic features of all spreadsheets, using a grid of cells arranged in numbered rows and letter-named columns to organize data manipulations like arithmetic operations.
You Can't
Microsoft Excel, as it is for numerical analysis and manipulation, which is what is done with quantitative data.
