Cream of Chicken condensed soup? I hate mushrooms (fungus!) so I always use cream of chicken instead. I do wish there was some way to make it myself since I can only find the mushroom kind in the stores here in France.
If you have milk, butter and flour you can salvage any cream based recipe. Take 4 TBS of butter and melt it in a skillet. Add flour until it makes a thick paste (about an equal amount to the butter). You are going to brown the flour. You are really just cooking out the nasty raw flour taste. Then you start adding milk and whisking. Don't stop whisking! Very important. You are trying to incorporate the flour into the milk and whisk out all the lumps. Add salt, pepper, seasonings, pretty much any flavor you want. This also make awesome homemade gravy. And the great thing is you make it as thick or thin as you want by adding more or less liquid! Good luck.
