There were several reasons, primarily the historically poor performance of the Russian Army in the First World War, and the poor performance of the Soviet Red Army in the 1930's, and during the invasion of Poland in September 1939 and then in their Winter War against Finland (November 1939-March 1940). Hitler also believed the Russians/Slavs to be inferior to the German people, and was convinced that Communism had weakened Russia/Soviet Union. After he defeated France in just 6 weeks, whereas it was not defeated in the First World War, Hitler thought that Russia (defeated in the First World War by Germany) would be easier to defeat than France. Also, Josef Stalin had seriously damaged the leadership & morale of the Soviet Red Army with his paranoia driven purges (murder) of its top officers in the short years prior to the Second World War.
Hitler was correct in his assessment of the USSR, he made serious military errors that gave the USSR the break it needed. For example, even though Kiev was a stubborn hold out, Hitler stopped the advance of his armies heading for Moscow to turn back and finish off that city.. On top of that was the fact the invasion was six weeks behind schedule. This was because a the Balkans were a problem. He should have waited another year.

Had Germany not invaded the Soviet Union, Germany could have concentrated all of it's resources on the Western Allies. They had always defeated France in the Phony War (Sitzkreig), all they need to theoretically was defeat Great Britain
