Water vapors makes up only a few percent of the mass of the atmosphere. However, this small amount of water vapor has in oceans and water bodies changes to a gas, water vapor. The mount of water vapor in the air is called humidity
The boiling water will evaporate (turn to vapor). The ice will melt (turn to liquid) and then begin to evaporate (turn to vapor). The tap water will begin to evaporate (turn to vapor).
Boiling water turns to vapor in the cold because the temperature difference between the hot water and the cold air causes the water to evaporate and turn into vapor.
Condensation
Evaporation is the process in the water cycle that is caused by an increase in temperature. When water temperatures rise, water molecules gain energy and turn into water vapor, which then rises into the atmosphere forming clouds.
Humidity is caused by water vapor in the air, but rain contributes to the amount of vapor in the air, so I suppose you could say they both do, but it's the water vapor that truly creates humidity.

Water heated will turn into water vapor. Even when it's not heated, evaporation is a process that occurs at all temperature for water, so water vapor can always form.
