A leak, either external or internal. An external leak would show up with coolant leaking on the ground. An internal leak may be hard to see if the leak is small. A large internal leak would show up by seeing white smoke coming out the exhaust pipe or coolant mixing with engine oil. A bad head gasket or a cracked head would be the likely suspect. Have a pressure test done on the cooling system to determine the cause.
If it gets cold enough the coolant will freeze and crack the block if there is no antifreeze.

Volkswagen or any other vehicle shouldn't use any antifreeze. If any car is using antifreeze something is wrong.
If you have water instead of antifreeze in your cooling system, it will freeze! You won't be able to start the car, because the engine is connected to the water pump (which won't be able to move). The type of car antifreeze that is safest to the environment is propylene glycol antifreeze. While it is still not totally safe, it is less toxic than other antifreeze.
If the temperature gauge rises quickly when you start your car, it probably needs antifreeze. Watch out when you fill the radiator. If antifreeze starts pouring from some random place under the engine, then your freeze plugs are probably shot. Cheap part to replace -- about $5. But the labor cost ... Ouch ...
