dirt in the carburator, incorrect fuelling or ignition (i.e. spark) breaking down under load.
Check that fuel is getting through, fuel pressure & that injectors are spraying correctly, and that plugs are giving a good healthy blue spark. If spark is weak it could be plugs, leads, coil, distributor cap / rotor arm or a bad earth - check everything.
A 350 engine will idle good but cut out and run rough while driving if there is a vacuum leak. This causes too much air to enter the engine under load.
see previous answers, but if it idles high it might be the Mass Airflow Sensor. if your car idles too high for too long and you keep driving it, you could burn out the transmission module (very expensive )
Could be the Throttle Positioning Sensor or the Idle Air Control Valve

I have a 98 S10 with the 2.2L engine. It has 180K miles on it. It idles (hot) between 20 and 40 psi. Driving down the road it shows 60 psi. That has been the same sense new.
On my Chevy truck it idles high when its low on antifreeze but if its not that more than likely its usually a vacuum line loose or cracked. good luck.
If the engine idles and revs up okay in neutral, it is likely the torque converter clutch lock up solenoid.

When you turn on the headlights of any car it causes a load (or horsepower drag) on the engine. Your car has an idle problem and the load on the alternator simply exacerbates it.
