Loosing dash lights of a fairly frequent basis is an indication there could be issues with the voltage regulator in the alternator. The voltage regulator is meant to "regulate" the voltage to ensure the electrical system power is even without spikes or lows. When these regulators become weak (this happens over time) they will start to toast light bulbs. This is due to the spikes getting through the system that the regulator is meant to catch. While you are at it, it would be wise to have your battery load tested to ensure it's up to scratch and working properly.

The dash light dimmer control switch could be a reason for all the lights to go out at once.

Why do the dashboard lights of a 2008 Toyota sienna go off when you turn on the head lights?

I've researched this on the Internet and apparently the trip odometer button also serves as the dimmer for the dashboard lights. If you turn it (anti)-clockwise, your dash lights should come on. Its mentioned obscurely in the manual.
