You may not have mixed it enough, or gotten a good enough gluten. My bread used to fall apart. Tasted good, but I couldn't make a sandwich. When I learned to put half the flour in at first, and mix it on high for a longer amount of time, then slowly add the rest of the flour and water, my bread turned out much nicer and firmer. You could also add VITAL WHEAT GLUTEN, which has protein, helps get a good chewy consistency, and helps with the shelf life of your homemade bread. Ground wheat, or wheat flour also has to be mixed longer than all white to get a good gluten as well.
