What causes white grey smoke after letting the van Idol for a long time or sitting in bumper to bumper traffic?

Just to clarify, it had extreme blue smoke at startup. I replaced the valve seals a few weeks ago. It helped a lot. Now it has a little bit of blue smoke at start up telling me I need a valve job later in the future. But if it idols for more than 5 min, it will smoke white grey smoke like you would not believe! To the point that cars would back off my tail. I sat in trafic for 2 hours, and nothing during the entire time. Once I got going and accelerate, it smoked realy realy bad. It wasn't blue smoke. After a few min, it went away. My coolant level is fine. Can Catalatic converter, or EGR system be bad?
