You will have to experiment with different loads from different makers and different chokes. Doubtbul that one choke will be the best at all three ranges.
Many of the adjustable chokes are adjusted by turning the choke. (If it does not turn with moderate hand force, it is probably gunked up with carbon- let soak in a good powder solvent for a day or two and try again). They work by squeezing movable strip closer together, or further apart- the tighter the squeeze, the tighter the choke. A tighter choke holds the shot column together longer, and gives a smaller pattern that has greater range.

You need to specify what you will be shooting and what gauge 1100 you have with what chokes??? If you are doing Clay sports, which one? Skeet? Trap? Sporting Clays? (all would have different answers) Hunting? What species? Duck/Geese not only need different loads, but require steel or non-tox shot as well. Upland birds? Turkey? Deer? (some states do not allow Buckshot, but only rifled slugs) Generally the best shot to use depends on your game and the choke you choose for that sport. i have a 1100 and use the long barrel for deer, i use 4 buck, and its seems like that holds the best pattern in any situation.
Choke linkage holds the throttle cable for a higher idle speed while cold. When you step on gas after choke is warmed up the throttle cable is released from the little cam type plate that has steps on it and allows the the cable to return to t's normal position. Sounds like the idle is set too low.

To adjust the primary chain you remove the oval-shaped inspection cover on the chaincase, loosen (don't remove) the 9/16" nut that holds the chain tensioner in place and move the adjuster up or down to adjust chain tension. The chain should have 5/8" to 7/8" of up-and-down play at its tightest point when the motor's cold and 3/8" to 5/8" of play when the motor's hot. To adjust the rear chain, loosen (but don't remove) the axle nut and turn the adjuster nuts (on the ends of the swingarm) in or out an equal number of turns to obtain proper chain tension. The rear chain should have about 1/2" of up-and-down play at its tightest point.
