i had a foal which was brown at birth (his mum a white and his dad brown) when he was two he was showing sign of going roan but at three now he is a white pony so you never no if they will stay the same or not x

There are a few possible explanations for how this can happen. The first would be that the allele for white color is recessive and both parents are carriers. The second is that the foal is the product of a single point, dominant mutation resulting in white coat color. These are the least likely explanations. Since there is no mention in this question of whether the parents have any white markings: The most likely reason for this result is that both parents carry the Sabino allele (Sb) and that the foal received the Sb allele from both parents which resulted in a foal with the maximum expression of the trait resulting in a virtually white foal. Finally there is also the possibility that both the parents carry the OLW allele that they passed to the foal which would result in a white foal that died shortly after birth due to associated defects of the intestinal tract.
That depends: you cannot say for certain. It all depends on the muddle of genetics that are mixed up to create a foal. It might be white, brown, dark cream, very light brown...or a random colour out of the blue such as black.

This completely depends on the ancestors of both of the parents for instence my friend had a black stallion and a white mare but her foal came out brown. this is because the mare's mother was brown, basically the brown gene from the "grandmother" skipped one genaration but was still in the white mares blood and so it was passed onto the foal. Genes can infact be passed on up to five generations down the line. hope this helps!

If the mare has pink skin she is probably maximum expression sabino and her base coat color can be extrapolated (to a degree) from the base color of her parents and grandparents. If the mare is a maximum expression sabino amount of white will be determined by the genetics of the stallion in conjunction with the genetics of the mare. If the mare has dark skin she is gray. Gray is independent of base color...so the resulting foal could be any base color with a 50 or 100% chance of being gray. If the mare is gray Gg there is a 50% chance that the foal will be grey, If the mare is GG any foal produced will be grey. Again base coat color can be extrapolated from the parents/grandparents to a degree. A gray horse will always have a gray parent. The stallion is XXee as he is sorrel/chestnut again, looking at his parents/grandparents may lend information on his genetics at the agouti site and the subsequent possible color of the foal.
Well this would depend on your definition of 'brown'. there is bay, brown, and chestnut (technically red but looks brown to those who don't know horses) The color of a horse is decided by genetics. The foal inherits a copy of each parents genetic code and then they express themselves on the foal.
Unfortunately your question is not specific enough about the colors of each parent horse. By white...do you mean a truly white horse? Such as one that carries dominate white, or is it maximally expressed sabino causing the white? Or is the mare actually grey with a white coat? As for the stallion what 'brown' do you speak of? Is it bay, brown agouti, or chestnut? And what is he homozygous for exactly? Is he a tobiano or another pattern. Without this exact information your question cannot be completely and accurately answered.

Its not breeds that will make a horse white, its the dam (mother) and sire (father) if they are both white (and have no recesive alleles for another coat color) then the foal will be white. But if you breed a Lipizzaner to another Lipizzaner you'll be guaranteed to get a white horse but be patient the foal will be born black and turn white with age.
