Lets say that if a girl gets married to a guy with brown eyes....it is know that all the children they'll have will be brown eyes. There is 75% of chance that the children will have brown eyes, and 25% that they could have green eyes.

This goes back to the whole recessive trait thing. It depends. For example: my husband has brown eyes, as do I, but both of us hold the recessive trait for green eyes, since we both have one parent with green eyes and one with brown. Of our children, we are two out of two for green eyes. When two parents hold a recessive trait (meaning it is not dominant-visible) the chances are something like 3 out of 4 the child will show the recessive trait as dominant.
