after animal blood his eyes are golden butterscotch like color but after human, like any other vampire, they become red tinged. The more human blood he drinks the redder his eyes will become.

His eyes are not supposed to turn red after he drinks blood. Only the new born vampires eyes are red. When Edward has not drank blood in awhile his eyes are darker/black and when he does drink blood they lighten up to that golden color.
It would be red cause if u think about twilight Edward is cold blooded!
If Edward is thirsty, his eyes turn black and he has these dark shades under his eyes. If Edward is 'full', his eyes turn butterscotch color. But, if a vampire drinks human blood, his or her eyes turn red. Usually, Edward's eyes are topaz color, described by Bella.

Before he was transformed, they were greenish blue. Since he drinks animal blood, they are black when he is thristy, and gold (or topaz as Bella says) when he has drinken blood. If he were to drink human blood, they would forever be red...unless, he SOMEHOW stoped drinking human blood. It is almost impossible to stop. (of course though, vampires are not real.)
Gold when he was well fed, black when he was thirsty, and would have been red if he fed on human blood.
