I always thought of her in blue- that was the original gown color when the fairies were making her birthday dress (the one we see her in throughout most of the 2nd half of the movie) however Disney as a company sells her princess gown in pink- probably because the DISNEY Cinderella gown is sold in blue (which is actually white in the movie) i think they altered the colors when making the Princess dolls to show make a pretty color scheme visually. So, strictly for packaging purposes; Belle is Yellow, Jasmine is Purple, Ariel is Light Pink, Tiana (and Tinkerbell) is Green, Cinderella is Blue, and Aurora is Hot Pink- for your question though, I would say blue, going off the movie and not baby dolls.
