If you blend red cabbage with water (the best ratio for this is 1:2, one cabbage leaf for two cups of water) and then add toothpaste the mixture will turn green. This indicates that toothpaste is a base. If you add vinegar instead the solution will turn red, indicating an acid.
Alkalis turn red cabbage juice blue/green/yellow.

In the light of my expierience the colour is purple.
To make a cabbage change colour you usually use red cabbage you cut the cabbage up and then you dip it in a bowl of of vinegar /lemonade this changes its colour because cabbage juice works as a acid/ alkaline indicator (eg red for acid) glad to help Jordan
