This is because the jewish people began to leave arabia and enter Europe, the Ashkanazi are mixed with central europeans and the Sephardic are mixed with iberans, but the Mizrahi never left arabia and are most likely the closest representation of what Jesus would have looked like. So the Mizrahi are basically the same as most arabian people, there skin is brown to light brown. I assume that the idea that Jesus is white came from people knowing he was jewish but there were already jewish people moving west at this time when people started to believe in Jesus so that caused people to think that the mixed Jewish people are what Jesus looked like.
