Bramley apples (not Brambley) are a British apple first grown about 1809 and first commercially available about 1850. In my view, the Bramley is easily the best cooking apple in the world. Raw, it is so sour as to be inedible - but mellows considerably when cooked and develops a very sophisticated, and unique, flavour and texture. Bramleys are very large apples and contain so much juice that there is no need to add water when cooking in pies, crumbles, sauces etc. Sugar and a little lemon juice is almost mandatory in these dishes, however. The only other countries to grow Bramleys in any quantity are the Irish Republic and the United States. Something I find totally inexplicable!
