You do not specify which eastern empire you are referring to. If you mean the Byzantine Empire, which is a term used by historians to refer to the eastern part of the Roman Empire after the fall of its western part, it fell in 1453, when the Ottoman Turks captured its capital, Constantinople.
The conventional date for the end of the western part of the Roman Empire is 476. This was the year when the last emperor of the west, Romulus Augustus, was deposed. The year 1453 is given as the date of the end of the eastern part of the Roman Empire, even though this empire, to all intents and purposes. had ended before that. This was the year when the Ottoman Turks conquered Constantinople, which had been the capital of the empire.
1453 is the year of the final collapse of the Roman empire. It is the year that Constantinople fell to the Ottoman Turks.
There is no set date (at least I have never found one) for the fall of the Western Roman Empire. It just kind of disintegrated over such along period (3rd to the 5th century AD). The date for the Eastern Roman Empire on the other hand is 1453, when the Ottoman Turks captured Constantinople

Armistice Day (which overlaps with Remembrance Day and Veterans Day) is celebrated every year on 11 November to commemorate the armistice signed between the Allies of World War I and Germanyat Compiègne, France, for the cessation of hostilities on the Western Front of World War I, which took effect at eleven o'clock in the morning—the "eleventh hour of the eleventh day of the eleventh month" of 1918. While this official date to mark the end of the war reflects the ceasefire on the Western Front, hostilities continued in other regions, especially across the former Russian Empire and in parts of the old Ottoman Empire.

Byzantine Empire is a term which has been coined by historians to indicate the eastern part of the Roman Empire after the fall of the western part of this empire.
