After searching a substantial list of Medieval occupations, I couldn't find dryer. I could find a dyer - maker dyes used to colour cloth.

The only other occupations that might come close is a dry salter - dealer in pickles, dried meats etc; dry stone waller - builder of stone walls; dyker - a Scottish term for stone waller.
