The Ottoman Empire did not change the nature of global trade itself. It was the presence of the Ottoman Empire and the antagonism that most of Western Europe had for the Ottomans that led to the Age of Exploration and a shift of trade from being primarily over the Mediterranean and over Asia to occurring on ocean routes that circumnavigated Africa. This Age of Exploration also led to the colonization of and trade with the Americas, which fundamentally changed international trade.

I can direct this answer to the American colonies of the British Empire. The most important benefits of being part of the British empire involved security and trade. Any serious military threats from such nations as Spain or France were negated by the American colonists by the armed forces of Great Britain. Also, sea trade was also protected by the vast navy of the British empire.

The Ottoman Empire did not contribute directly to the Age of Exploration and the Ottomans fielded no ships over the Atlantic. However, the Ottoman Empire had the indirect impact of cutting off all direct European trade routes to East Asia, prompting Europeans to search for a sea-route to East Asia. This is what led to the Age of Exploration.
