The Plan assumed that Germany would wind up fighting France and Russia at the same time. So the plan was to attack France with most of Germany's military, going through Belgium and the forests of northern France; then to proceed onward to Paris to force France to make peace. Germany could then turn its attention to Russia.
Russia was (and still is) a huge country with a lot of people and a HUGE army. Its military, however, was somewhat old fashioned and not as good as the professional German Army. Additionally, Russia was very backwards, with lousy infrastructure. So it took time for the Russian Army to "mobilize" (that is, get men together, give them weapons and training, and then send them to fight). Schlieffen knew this, and knew that France's Army was much more modern, about the same as Germany's. The fact that France is very close to Germany with good infrastructure made them even more dangerous.
So the key was to knock the French Army before the massive Russian Army could arrive.
