They didn't clean it and because of that it often caught fire. Many houses burned down as a result. In Jefferson's slave quarters the historians found nails that were in a pattern and for a long time they couldn't figure out why. Finally, it was discovered that the nails came from chimneys of the slave quarters. The chimneys were made so when they caught fire they could be pulled down saving the house. This left the pattern of nails on the ground. Many houses were also built to have separate kitchens for the same reason. Kitchens often caught fire because of the cooking so they built them apart from the main house. You can see an example of this at Mt. Vernon.
