I am unaware of any specific tradition or ritual concerning this. Certainly monuments in even the most conservative of Jewish cemeteries are placed in many directions. Presumably the deceased is placed similarly.
It is true that as a tradition, anything to do with being closer to the east, the direction Jerusalem would normally be considered an honor. (As in seats by the eastern wall of a Temple are of a higher stature)...the Torah would be that way, etc. I don't think it is an actual scriptual rule of the religion however.

I am aware of at least one cemetery where some of the headstones face east and some face west. The community had members with two different traditions. One tradition said that the head of the deceased should be toward Jerusalem, while the others said that the feet should be toward Jerusalem. My rabbi's (not entirely serious) explanation was that perhaps one group thought that, upon resurrection, the dead would swim through the earth toward Jerusalem and then emerge there. Thus, head toward Jerusalem. Perhaps the other group thought that the dead would stand up upon resurrection, emerge from the earth facing Jerusalem, and then walk. Does this make sense?

it is believed that the person will be able to see their body when they die and in order for the soul not to be frightened a person will keep the body "company" and show that the person was loved and cared for in their life. that is also why a bosy according to judaism is buried as soon as possible
In Judaism, the dead are ideally buried within 24 hours after death or as soon as possible if there are extenuating circumstances.
