They know this because they have had many years of experience and operations. Maybe when people die, they use their old brains, if that person signed a thing that told them they could, and tested things on that persons brain.

Most scientists who are studying the very complex activities of the brain ust Magnetic Resonance Imagin (MRI) or CT scanning to show what parts of the brain are active during Different thinking proccesses. An older technique was to send minor electical currents into different area of the brain to see what happend in the body. A prime example is the primary motor complex. When a person receives an electric pulse to part of this are of the brain (directly infron of the cental sulcus) they move the part of there body that relates to that part of the complex. This movement happens entirely without the subject knowing it suggesting that this is where the crude movement comman is formed not where the thinking about moving is don't.

The brain can be examined in several ways. Anatomical cross sections can be made, post-mortem, in order to characgterize an illness or determine cause of death. CT and MRI scans of the brain can assess disease processes. PET scans of the brain can track blood flow to different regions of the brain, and assess potential areas of hypoperfusion (or suboptimal oxygenation in certain portions of the brain).

What is a neuro scientist?

A neuroscientist is a type of biological scientist that specializes in studying the brain. This has a LOT of subcategories, so really a neuroscientist is an umbrella term for professions such as structural neurobiologist, cognitive neuroscientist, etc.. Neuroscientists tend to be research oriented, whereas neurologists are the clinical doctor side of this profession. Although, to my knowledge, there is cross over. For example, a clinical neuropsychologist does both research and/or work with doctors for diagnosis of patients with brain trauma or disease. Anyhow, to sum it up, these scientists study the function and structure of the brain, how it works, what affects it, what causes defects, etc.. They use anything from cells to animal models to human brain imaging to do this research. They have provided us with most of what we know about the brain.
